Virgilio Martínez, chef-owner of Latin America’s No. 1 restaurant, Central, will be discussing the past, present and future of his country’s cuisine with fellow chefs including Gastón Acurio on Thursday 27th November at our #50BestTalks event in Lima, sponsored by BBVA.
In the run-up to the invitation-only discussion, we caught up with Virgilio at his second London restaurant, Lima Floral. Here he talks about the impact of being named No. 1 in Latin America’s 50 Best Restaurants 2014, the challenges of adapting his food for a UK audience, and his relationship with fellow Latin American chefs.
